Betty Carter's Double Pecan Pie

Ingredients

  • 3 x Large eggs
  • 2/3 c. Sugar granulated
  • 3/4 c. Dark syrup
  • 1/8 tsp Salt
  • 3 Tbsp. Butter melted
  • 2 c. Pecans minced
  • 2 x Pie shells,unbaked 8"

Directions

  1. Preheat oven to 400'F.
  2. Beat Large eggs till blended, add in sugar, syrup, salt, and beat thoroughly.
  3. Stir in butter.
  4. Put 1 c. of pecans in each pie shell. Pour liquid mix equally over each.
  5. Place pies on a cookie sheet on middle rack of oven, bake for 10 min, then lower temperature to 300'F. and continue to bake till filling is hard, about 30 min.
