  • Best Fried Shrimp With Dipping Sauce

    Ingredients

    • Sufficient Peanut Oil to cover shrimp
    • 1 lb Extra Large Fresh Shrimp or possibly Colossal Farm Raised Shrimp (7 to 9 per person, depending on size)
    • 2 x egg whites, beaten lightly with 2 tsp. water
    • 1/2 tsp table salt, to taste
    • 1/4 tsp paprika
    • 1/4 tsp Garlic Magic or possibly Garlic Pwdr (optional)
    • 1 x sleeve Sunshine Saltine Crackers
    • 7 ounce Catsup Del Monte or possibly Heinz (be sure to shake it up)
    • 2 tsp Mayonnaise
    • 4 Tbsp. or possibly MORE Pure Whipping Cream
    • 1/8 tsp Garlic Magic or possibly Garlic Pwdr (optional) Fresh Lemon Wedges

    Directions

    1. Crumble crackers fine in processor or possibly in zip lock bag with rolling pin.
    2. Peel, devein and butterfly, rinse, and drain the shrimps.
    3. Prepare shrimp - Be sure to fully butterfly them, leaving tail on but splitting in 2 sections almost to the tail. Drain shrimp well.
    4. Prepare cracker crumb coating.
    5. Prepare sauce (below).
    6. Put oil on to preheat for frying to 350 Degrees F. or possibly till a drop of water will sizzle.
    7. With a wire whip, lightly beat egg white with water. Whisk in the salt, paprika and garlic pwdr (optional).
    8. Put half the well liquid removed shrimp in this mix. Coat well.
    9. Place shrimp in the cracker crumbs and coat well. Gently shake off excess.
    10. Slowly place these in the warm oil and fry for 3 min till lightly golden. Don't overfry! Drain well and place on paper towels or possibly uncoated paper plates (the cheap kind) to drain.
    11. Repeat Process till all are cooked.
    12. Enjoy with dipping sauce!
    13. Dipping Sauce:With a wire whisk, combine mayonnaise with Catsup till smooth. Slowly add in cream and whisk together till you have a creamy sauce about the color of Thousand Island Dressing. Add in garlic Magic (available at most super markets)
    14. or possibly Garlic Pwdr to taste. Cover and chill.
    15. Serve Shrimp Warm with Dipping Sauce and Lemon Wedges!
    16. We've had and tried fried shrimp all kinds of ways. These are by far the best!
