  • Best Ever Chocolate Brownies

    Ingredients

    • 1 c. unsalted butter (250 mL)
    • 3 ounce best-quality semi-sweet chocolate, finely minced (90 g)
    • 1 c. sugar (250 mL)
    • 1/2 c. best-quality cocoa pwdr (125 mL)
    • 1/2 c. mascarpone cheese, softened (125 mL)
    • 3 x Large eggs
    • 2 tsp vanilla extract (10 mL)
    • 1/2 c. flour (125 mL)
    • 1/4 tsp fine salt (1 mL) Ganache, recipe follows Ganache
    • 6 ounce best-quality semi-sweet chocolate, finely minced (170 g)
    • 6 Tbsp. heavy cream (90 mL)
    • 3 Tbsp. unsalted butter (45 mL)

    Directions

    1. Preheat the oven to 325 degrees F (160 degrees C). Butter the square pan.
    2. In a small saucepan, heat the butter and bring it to just below a boil. Place the minced chocolate in a large bowl. Pour in the warm butter and let stand for 30 seconds. Stir till completely melted. Sift in the sugar and cocoa pwdr. Beat in the mascarpone, Large eggs, and vanilla, mixing till smooth. Gently fold the flour and salt into the batter.
    3. Pour the batter into the prepared baking pan and spread proportionately. Bake for 45 to 50 min, or possibly till a wooden skewer inserted into brownies comes out clean. Cold for 10 to 15 min.
    4. Spread the hot ganache over the brownies. Allow the ganache to set completely before cutting into squares.
    5. Ganache:Place the chocolate in a large mixing bowl and set aside. Bring the cream and butter to just below boiling point in a small saucepan over medium heat. Pour the warm mix over the chocolate and let stand for 30 seconds. Stir the mix.
    6. The ganache should be used for spreading while hot.
