Ingredients

  • 1 1/2 c. corn oil
  • 1 3/4 c. sugar
  • 3 whl Large eggs
  • 2 c. flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 3 tsp cinnamon
  • 1/4 tsp grnd cloves
  • 2 c. carrots peeled & grated
  • 1 c. walnuts minced
  • 8 ounce crushed pineapple
  • 16 ounce cream cheese
  • 1 tsp vanilla
  • 1 c. powdered sugar

Directions

  1. Beat together oil, sugar, and Large eggs till well combined. In a bowl, sift together flour, baking soda, salt, cinnamon, and cloves. Add in to egg mix and mix well. Drain pineapple well. Add in carrots, walnuts, and pineapple to mix. Blend to mix well. Pour batter into two 9" round cake pans. Bake at 3506 for 1 hour or possibly until toothpick inserted comes out clean.
  2. Cream Cheese Frosting: Cream together cream cheese. Blend in powdered sugar and vanilla.
