  • Best Banana Bread

    Ingredients

    • 4 very ripe bananas
    • 113 g (1/2C) unsalted butter, melted
    • 165 g (3/4C) lightly packed brown sugar
    • 2 Large eggs
    • 1/4 Cup plain yogurt
    • 1 tsp Vanilla
    • 256 g (2C) all purpose flour
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 3/4 cup chopped nuts of your choice
    • 1/2 tsp cinnamon
    • 1/2 tsp allspice
    • 1/4 tsp ground cloves

    Directions

    1. Preheat oven to 350, line standard size muffin tin with parchment paper and oil the ends. This recipe works for 1 standard size loaf pan or three mini loaf pans
    2. In a bowl of a standmixer or hand mixer, or by hand. I used stand mixer
    3. Combine the melted butter and brown sugar until mixed together. I used frozen bananas. First run warm water over peels. It's easier to remove peels then cut bananas into quarters. Add them to bowl of sugar butter mixture. Run mixer until bananas are encorperated. In the container that you used to melt butter, add the eggs, vanilla, and yogurt to the banana mixture and run mixer to encorperated
    4. Measure out the dry ingredients together before emptying into a sieve. Then shake contents into mixer bowl. Run to encorperate. Add the nuts use a wooden spoon to mix into batter. Watch that after the dry ingredients are added that you don't overdo. Batter should be lumpy.
    5. Pour batter into prepared pan bake for 65-75 minutes. The top should be cracked open. If using mini loaf pan reduce time about 15 minutes.
