Ingredients

  • 4 lrg Beets, trimmed
  • 1 c. Orange juice
  • 2 Tbsp. Sugar
  • 2 Tbsp. (1/4 stick) butter
  • 1 Tbsp. Chopped orange zest, (orange part only)
  • 2 tsp Red wine vinegar

Directions

  1. Preheat oven to 400 F. Wrap 2 beets together in foil. Repeat with remaining beets. Place on baking sheet. Bake till tender, about 1 hour 15 min.
  2. Cold. Peel beets. Cut each into 8 wedges.
  3. Combine beets and remaining ingredients in medium nonaluminum saucepan.
  4. Simmer over medium heat till sauce is syrupy, stirring often, about 8 min. Season with salt and pepper.
  5. (Can be made 1 day ahead. Chill. Rewarm over low heat, stirring often.)
  6. Serve warm.
