  • Beef Tortilla Casserole

    Ingredients

    • Basic Red Sauce, *
    • 1/2 c. Vegetable Oil
    • 1 lb Grnd Beef
    • 1/2 c. Onion, Minced, 1 Medium
    • 8 ounce Cheddar Cheese, Shreeded, 2C Southwest Guacamole, **
    • 10 x Corn Tortillas, ***
    • 2 x Anaheim Chiles, ****
    • 15 ounce Pinto Beans, Liquid removed, 1 cn Dairy Lowfat sour cream

    Directions

    3. *** Tortillas should be 6 to 7-inches in diameter and be cut into
    4. **** Chiles should be seeded and finely minced.
    5. Prepare Basic Red Sauce and Southwest Guacamole; set aside. Heat oil in 10-inch skillet till warm. Cook tortilla strips in oil till light golden, about 1 minute; drain. Cook and stir grond beef, chiles, and onion till beef is brown; drain. Heat oven to 350 degrees F. Arrange tortilla strips in bottom of greased rectangular baking dish 13 X 9 X 2-inches.
    6. Top with beef mix, Basic Red Sauce, beans, and cheese. Bake till warm and bubbly, 25 to 30 min. Serve with Southwest Guacamole and Lowfat sour cream.
