Beef Tenderloin With Horseradish

Ingredients

  • 2 1/2 lb Beef tenderloin
  • 1 Tbsp. Cajun seasoning
  • 1 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Dijon mustard
  • 1 1/2 c. Fresh horseradish - peeled, grated
  • 2 tsp Chopped garlic
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper

Directions

  1. Directions: Trim the tenderloin of excess fat. Rub the Cajun seasoning and extra virgin olive oil onto the tenderloin. Heat a large saute/fry pan till very warm. Brown the tenderloin on all sides for approximately 2 min. Place the browned meat onto a roasting rack inside a shallow baking pan. Rub the top and sides of the meat with the Dijon mustard.
  2. In a small bowl, combine the horseradish, garlic, salt, and pepper.
  3. Press the mix onto the top and sides of the meat, over the mustard. Roast the tenderloin, uncovered, at 400 degrees for 35 min for medium rare. Let the roast rest for 5 min before slicing.
