Beef Tenderloin

Ingredients

  • 1 beef tenderloin, about 4 lbs.
  • MARINADE:
  • ½ onion, minced
  • 1 cup of olive oil
  • 1/3 cup of red wine vinegar
  • 3 cloves garlic, minced
  • salt and pepper

Directions

  1. Combine marinade ingredients in a bowl. Place uncooked tenderloin in a glass-baking dish. Pour marinade over. Cover with plastic, and allow meat to marinate for at least 4 hours.
  2. Heat oven to 475°. Remove tenderloin from the glass baking dish and place in a baking pan. Discard marinade. Bake the tenderloin for the amount of time you have calculated, or test with a meat thermometer to see if the meat has reached your desired degree of doneness. Remove from oven, and allow to cool before serving.
