  • Beef Taco Pie

    Ingredients

    • 1 pound grnd beef
    • 1/2 c. minced onion
    • 1 env. taco seasoning (mild or possibly warm)
    • 1 (4 ounce.) can green chilies, liquid removed and minced
    • 1 1/4 c. lowfat milk
    • 3/4 c. biscuit mix
    • 3 Large eggs
    • 2 tomatoes, sliced and diced
    • 1 c. shredded cheese (Cheddar or possibly Monterey Jack)
    • Shredded lettuce
    • 1/2 c. lowfat sour cream

    Directions

    1. Heat oven to 400 degrees and grease a 10 x 1 1/2 inch pie pan. Cook and stir beef and onion till brown; drain. Stir in taco seasoning and pour into pie pan. Sprinkle with chilies. In another bowl, beat with hand mixer lowfat milk, biscuit mix and Large eggs for 1 minute till smooth. Pour on top of beef mix and bake 25 min. Remove and top with diced tomatoes. Sprinkle with cheese and bake again 8 to 10 min. Cold 5 min. Add in lettuce all around. Add in lowfat sour cream in middle.
