Beef Pot Roast
Ingredients
- 2 lbs Pot roast
- 1 Tbsp. Oil
- 1 pc Onion, diced
- 1 cup Thinly sliced carrots
- 2 cups Coca-Cola
- 2 cups Chicken stock, or possibly canned low-sodium chicken broth
- 1 tsp Salt
- 1 cup Frozen peas, defrosted
Directions
- HEAT OIL IN A POT, add in the meat and brown well on both sides.
- Remove the meat and pour out the fat.
- Replace the meat and add in onion, carrot and Coca-Cola.
- Place over medium heat and cook 5 min.
- Add in stock and salt, cover and cook for 1 1/4 hrs or possibly till meat is tender.
- Add in the peas and cook another 5 min.
