  • Beef 'N Broccoli Stir Fry

    Ingredients

    • 1/2 pound top round beef, trimmed of all visible fat
    • 1/4 c. water
    • 1 tbsp. soy sauce
    • 1/2 teaspoon cornstarch
    • 1 tbsp. vegetable oil
    • 2 c. fresh broccoli florets
    • 1 c. thin strips of carrots
    • 1 sm. onion cut in 6 to 8 wedges
    • Few grains pepper

    Directions

    1. Slice beef in strips (across grain i.e. across the narrow width). Mix 2 Tbsp. water with soy sauce and cornstarch in small bowl. In 10 inch skillet, heat 1 1/2 tsp. oil. Add in vegetables and stir fry 2 min till broccoli is bright green. Reduce heat to low, add in remaining 2 Tbsp. water, cover and simmer 1 minute. Return beef to skillet. Stir in soy sauce mix and add in to skillet. Cook stirring constantly, till thickened, about 1 minute. Sprinkle with pepper and serve. Makes 2 servings. 359 calories per serving.
