  • Beef Hot Dog Giambotte

    This was a quick and easy meal my mother prepared for us as children. It was simple and delicious. What kid does not like hot dogs?

    Ingredients

    • Package of beef franks
    • 2 tbsp. of olive oil
    • 1 green bell pepper, sliced into thin strips
    • 1 red bell pepper, sliced into thin strips
    • 1 large sweet onion, diced
    • 3 potatoes sliced thin
    • 1 8 oz. can of seasoned tomato sauce (optional)

    Directions

    1. Brown the beef franks in the olive oil. When they start to plump up and get browned toss in the rest of the ingredients and cover with a lid. Lower heat to a simmer and cover the pan. Let the vegetables soften from the steam and remove the lid. Cook until the vegetables look like they are getting carmelized from the natural juices. Serve with crusty Italian rolls.
    2. This recipe may also be known as Italian hot dogs.
