Beef And Pasta Salad With Creamy Blue Cheese Dressing
Ingredients
- Nonstick cooking spray as needed
- 1 x beef filet mignon - (abt 12 ounce) visible fat trimmed (or possibly boneless eye of round steak)
- 8 ounce radiatore pasta cooked, and cooled to room temperature
- 1 1/2 c. broccoli florets cooked crisp-tender, and cooled
- 1 x yellow bell pepper sliced
- 1 x tomato cut into wedges
- 1 x carrot sliced
- 1/2 sm red onion thinly sliced Salt to taste Freshlt-grnd black pepper to taste
- 1/2 c. fat-free mayonnaise
- 2 Tbsp. crumbled blue cheese
- 1 Tbsp. white wine vinegar
- 1/2 tsp dry dill weed
- 1 x garlic clove chopped
- 1 tsp lemon juice
Directions
- Spray small skillet with cooking spray. Heat over medium heat till warm. Add in beef and cook 5 to 7 min on each side or possibly till desired doneness. Cut beef into 1/4-inch slices.
- Toss beef, pasta and vegetables in large bowl; drizzle with Creamy Blue Cheese Dressing and toss. Season to taste with salt and black pepper.
- Creamy Blue Cheese Dressing: Mix all ingredients in small bowl; chill till ready to use. Stir before serving. (
- Makes about 2/3 c.)
