    During the off-season, when salmon aren’t readily available up north, Alaskan bears eat mainly nuts and berries. So to track a bear in the woods, you simply look to the forest floor and watch for “bear sign”. Need I say more? Ha! These are SO easy and can be thrown together during a quick tv commercial break and ready to come out of the oven before the movie or the game is even half-over!

    Ingredients

    • 2 c. butter, softened
    • 2 c. sugar
    • 2 eggs
    • 4 c. all purpose flour, sifted
    • 2 c. chopped nuts, any variety
    • 2-3 c. any fruit (I most often use fresh or frozen blueberries- or a blue/cran mix)

    Directions

    1. Pre-Heat oven to 350.
    2. Mix the first 5 ingredients together until coarse- resembling pie pastry dough.
    3. Press ¾ mixture into a buttered jelly-roll pan (i/2 sheet-pan).
    4. Scatter fruit across top, then sprinkle remaining flour mixture atop, in a “struesel” fashion.
    5. Bake 25-30 minutes until lightly golden. Cool. Cut into squares. Serve.
    6. (This is SO versatile! ANY fruit can be used- even canned/drained, dried, frozen- jams/jellies also work well)
