  • Beans & Italian Sausage

    Ingredients

    • 1/2 pound sweet Italian sausage
    • 1/2 pound warm Italian sausage
    • 1 tbsp. vegetable oil
    • 1 3/4 c. minced onion
    • 3/4 c. mushrooms, sliced (3 c.)
    • 3 (16 ounce.) cans pork & beans in tomato sauce
    • 1/3 c. tomato juice
    • 1 teaspoon leaf oregano, crumbled
    • 1 teaspoon salt
    • 1/8 teaspoon crushed red pepper flakes
    • 1 c. uncooked long grain rice

    Directions

    1. Cook sausage in vegetable oil in a large skillet till brown and no pink remains, about 20 min. Remove with a slotted spoon to a Dutch oven or possibly heavy saucepan. Pour off all but 2 Tbsp. of fat from skillet. Saute/fry onion and mushrooms till tender, about 3 min. Add in onion mix to sausage. Add in beans, tomato juice, oregano, salt and pepper to sausage. Bring to boiling; lower heat; simmer 15 min. While beans cook, cook rice following label directions. Serve beans over rice. Makes 8 servings.
