Beans And Rice Salad
Ingredients
- 1 can black beans
- 1/4 c. Italian salad dressing
- 1/4 teaspoon pepper
- 3/4 c. long grain, uncooked
- 1/4 c. Italian dressing
- Lettuce leaves
- 3/4 c. shredded Cheddar cheese
- 3 med. green onions
- 1 med. tomatoes, minced
- Lowfat sour cream, optional
Directions
- Combine first 3 ingredients. Cover and refrigerateat least 8 hrs. Cook rice omitting salt. Rinse with cool water; drain. Combine rice and 1/4 c. salad dressing, stirring well. Refrigerateat least 8 hrs. Spoon rice into individual lettuce lined plates. Spoon bean mix over rice. Top with cheese, green onions, tomatoes and if you like, lowfat sour cream.
