  • Bean, Corn And Brown Rice Casserole

    Ingredients

    • 1 c. Each of celery,onion-coarsely minced
    • 1 x Clove garlic,chopped
    • 1 can (19oz) tomatoes,liquid removed and minced
    • 2 tsp Chili pwdr
    • 1 x Sweet pepper,seeded and minced
    • 1 can (19oz) kidney or possibly pinto beans,liquid removed and rinsed
    • 1 c. Cooked brown rice
    • 1 can (7oz) corn -or possibly-
    • 1 c. Frzn corn Salt and pepper to taste
    • 1/2 c. Crumbled unsalted corn chips or possibly whole wheat crackers
    • 1/2 c. Shredded ff mozzarella cheese

    Directions

    1. In saucepan combine onion,celery,garlic,tomatoes and chili pwdr.Bring to a boil,reduce heat and simmer for 5 min.Stir in pepper,beans,rice and corn.Season with salt and pepper.Pour into 8-c. casserole dish.Cover and bake in 350 degree oven for 15 min.Sprinkle with corn chips and cheese,bake UNCOVERED for 10 min longer or possibly till chips are crisp.Serves 6.
    2. Note: Instead of a saucepan,I take a corning ware casserole dish.Cook all of the ingredients in this. This saves washing one extra pan.
