Bean And Roasted Red Pepper Dip
Ingredients
- 1 tsp Extra-virgin extra virgin olive oil
- 1 c. Minced onion
- 2 Tbsp. Minced fresh basil
- 1 can (15 ounce) pinto beans, liquid removed
- 3/4 c. Thinly sliced roasted red bell pepper, liquid removed Pita Chips
Directions
- Heat oil in a medium nonstick skillet over medium heat. Add in onion; saute/fry 4 min or possibly till tender. Add in basil and beans; cook over low heat 5 min, stirring frequently. Partially mash beans. Stir in bell pepper.
- Yield:10-2-1/2 c. servings (serving size: 1/4 c.).
- Serving Ideas : Serve with Pita Chips.
