Bean And Lentil Salad With Orange Vinaigrette
Ingredients
- 1 1/2 c. Green lentils, cooked (canned) rinse and drain
- 1/2 c. black beans, canned rinse and drain
- 1/2 c. navy beans, canned rinse and drain
- 1/2 c. red bell peppers diced
- 1/2 c. green bell peppers diced
- 1/2 c. carrots diced, blanched
- 1/2 c. corn roasted
- 1/2 c. red onion diced
- 2 Tbsp. fresh basil leaves minced
- 2 Tbsp. fresh cilantro minced
- 1 x Jalapeno seeded, chopped
- 1 c. orange juice
- 2 Tbsp. fresh lime juice
- 1/2 c. rice vinegar
- 1/2 c. orange sections Salt and pepper to taste
Directions
- Combine ingredients. Season to taste. Serve chilled or possibly at room temperature.
- Yield: 5 c.
