  • Bean And Apple Bake

    Ingredients

    • 2 tsp extra virgin olive oil
    • 1 1/2 lb grnd turkey (have your butcher grind this for you)
    • 1/2 c. chopped onion
    • 1 can vegetarian baked beans - (24 ounce)
    • 2 c. canned no-sodium tomato sauce
    • 1 Tbsp. brown sugar
    • 2 Tbsp. Dijon mustard
    • 1/2 c. diced Gala apples
    • 1/2 c. red wine vinegar

    Directions

    1. Preheat the oven to 325 degrees.
    2. Heat the oil in a skillet over medium-high heat. Add in the turkey and saute/fry till the turkey is almost cooked through, about 7 min. Add in the onion and saute/fry for 5 more min.
    3. Combine the turkey with the remaining ingredients and place into a casserole dish. Bake, covered, for 45 min till bubbly.
    4. This recipe yields 6 servings.
    5. Serving size: 1 c. (3 ounces turkey, about 1/2 c. beans).
    6. Comments: This is a heartier and healthier version of baked beans.
