Bean And Apple Bake
Ingredients
- 2 tsp extra virgin olive oil
- 1 1/2 lb grnd turkey (have your butcher grind this for you)
- 1/2 c. chopped onion
- 1 can vegetarian baked beans - (24 ounce)
- 2 c. canned no-sodium tomato sauce
- 1 Tbsp. brown sugar
- 2 Tbsp. Dijon mustard
- 1/2 c. diced Gala apples
- 1/2 c. red wine vinegar
Directions
- Preheat the oven to 325 degrees.
- Heat the oil in a skillet over medium-high heat. Add in the turkey and saute/fry till the turkey is almost cooked through, about 7 min. Add in the onion and saute/fry for 5 more min.
- Combine the turkey with the remaining ingredients and place into a casserole dish. Bake, covered, for 45 min till bubbly.
- This recipe yields 6 servings.
- Serving size: 1 c. (3 ounces turkey, about 1/2 c. beans).
- Comments: This is a heartier and healthier version of baked beans.
