BBQ Leeks with a Tomato & Olive Dressing

Ingredients

  • 8 smallish leeks
  • olive oil spray
  • 1 punnet cherry tomatoes, quartered
  • 8 pitted black olives, sliced
  • 1 tbsp honey
  • juice of 2 lemons
  • 1 cup olive oil
  • sea salt & freshly ground pepper
  • fresh basil leaves

Directions

  1. Clean and trim the leeks. Then blanch in boiling water until almost cooked. Drain well.
  2. Spray the leeks with oil and cook on a preheated ridged grill (or BBQ) until well coloured and tender.
  3. To make the dressing, combine the tomatoes, olives, honey, lemon juice and oil with a little salt and a decent amount of pepper. Taste for seasoning.
  4. To serve, arrange the leeks on individual plates, spoon the dressing over the top and garnish with basil.
