Baby backs are very expensive, so ruining a batch is not fun. Plus, you have to come up with something else to serve. This recipe is not difficult, and allows the beginning rib cook to be successful the first time out, and serve tender, delicious ribs.

    Ingredients

    • 1 1/2 -2 lbs. baby backs, silver membranes removed (ask your butcher to do this, or show you how).
    • Video?
    • 1/2 cup BBQ Rub for Pork and Poultry, or commercial rib rub
    • 1 recipe bbq sauce, or 1 12 cups bottled (Garland Jack's, Sweet Baby Ray's)
    • 1 small bag charcoal + a bag of hickory chips
    • 1 9x13 aluminum pan

    Directions

    1. Prepare the grill by placing the aluminum pan with 3 cups of water in it, and the coals on the other side.
    2. Grease the grate.
    3. Place the aluminum pan with 2 inches water in it on the othr side of the charcoal.
    4. Put lighter fluid on coals, light them. Put grate back on.
    5. Remove membranes on backs of ribs.
    6. Prepare rub and massage it into ribs.
    7. When coals have ashed over, add some wood chips, place ribs on the grill on cool side. Close grill lid.
    8. Every 30 minutes x 2, add some chips and a bit of charcoal, then turn ribs.
    9. The last 30 minutes, begin basting the ribs with the bbq sauce.
    10. The ribs are done when the meat withdraws from the end s of the bones.
    11. Remove. Let rest 10 minutes. Slice between each rib and serve.
    12. Total grill time: 2 hours.
