  • Basque Chicken In Clay Cooker

    Ingredients

    • 1 x Green pepper, cut in strips
    • 2 x Onions, sliced in rings
    • 1/4 lb Mushrooms, sliced
    • 2 x Cloves garlic, chopped
    • 1 x Frying chicken, (3-3 1/2 lbs.) quartered
    • 1 tsp Salt
    • 1 pch Black pepper
    • 1/4 tsp Cayenne
    • 1 x 8 ounce. can tomato sauce
    • 1/4 c. Dry white wine, (or possibly water)
    • 2 tsp Cornstarch
    • 1 Tbsp. Water

    Directions

    1. Soak top and bottom of clay cooker in water for 15 min Drain. Place green pepper, mushrooms, onion, and garlic in cooker. Place chicken quarters, skin side up over vegetables. Sprinkle with salt and peppers. Mix tomato sauce and wine, pour over chicken.
    2. Place cooker in cool oven. Set oven temp. at 450 and bake 1 1/4 hrs.
    3. Remove chicken pcs and keep hot.
    4. Pour cooking liquid from cooker into a medium skillet. Mix cornstarch and water; stir into skillet. Heat to boiling, stirring constantly, till thickened and clear. Pour over chicken and serve.
