Basmati Rice With Peas And Pine Nuts
Ingredients
- 2 Tbsp. peanut oil
- 1 c. finely minced red onion
- 1 tsp curry pwdr Salt and pepper to taste
- 2 c. basmati rice
- 1/4 c. apple juice
- 2 c. water
- 1 c. fresh or possibly frzn green peas
- 2 Tbsp. toasted pine nuts
Directions
- 1. Heat oil in a large skillet over medium-high heat. Add in onion, and sprinkle with curry pwdr, salt, and pepper. Cook 3 min, stirring occasionally.
- 2. Add in rice, stirring to coat. Cook for 1 minute, stirring occasionally. Stir in apple juice, mixing well to combine. Stir in water. Cover and lower heat to medium-low. Simmer, tightly covered, for about 40 min, till rice is tender and water is absorbed.
- 3. If using fresh peas, stir them into the rice halfway through the final cooking time. If using frzn, add in MC_Busted by Karen C. Greenlee
