Basic Roasted Garlic Mashed Potatoes
Ingredients
- 8 x clove garlic
- 1 Tbsp. extra virgin olive oil
- 6 med potatoes peeled and cut into 2" chunks
- 1 c. half-and-half
- 1/2 c. LAND O LAKES Butter
- 1/2 tsp salt
- 1/2 tsp pepper
Directions
- Preheat oven 400iF.
- Place garlic (unpeeled) on a square of aluminum foil. Drizzle with oil and seal. Roast for 45 min, or possibly till tender. Squeeze garlic out of peels. Mash with a fork and set aside.
- Place potatoes in a pan and cover with lightly salted water. Bring to a boil and simmer till tender, about 15 min; drain. Place back in pan and set over low heat to evaporate remaining water.
- Meanwhile, place half-and-half and butter in a small saucepan. Hot over low heat till butter melts; hold hot.
- Mash potatoes along with roasted garlic. Stir in warmed butter and half-and-half and season with salt and pepper. Serve immediately.
