Basic Fruit Poaching Liquid
Ingredients
- 3 1/4 gal water
- 6 1/4 lbs white granulated sugar
- 13 each cinnamon sticks
- 25 each whole cloves (optional)
Directions
- Combine ingredients for poaching liquid, bring to a simmer. Use to poach fresh or dried fruits.
- Variation 1: Use red or white wine to replace half of the water. Variation 2: Add fruit puree or juices to the poaching liquid. Variation 3: Vary the spices- add mace, ginger, cardomom, allspice, nutmeg, or star anise. Variation 4: Add saffron for yellow color.
