  • Basic Belgian Waffle

    Easy, delicious waffles for a perfect Sunday morning.

    Ingredients

    • 2 c. flour
    • 1 teaspoon salt
    • 8 Large eggs, separated
    • 1/2 c. butter, melted
    • 1 teaspoon vanilla extract
    • 2 c. lowfat milk

    Directions

    1. In a small bowl, mix flour and salt; set aside.
    2. In a large bowl, beat egg whites with electric mixer on high speed till stiff peaks form.
    3. In another large bowl, beat egg yolks with electric mixer on high speed till thickened and lemon-colored, about 5 min.
    4. Stir in melted butter and vanilla.
    5. Alternately add in flour mix and lowfat milk to yolk mix, beating well after each addition.
    6. Fold egg whites into yolk mix.
    7. Prepare Belgian waffle iron according to manufacturer's directions. Using 1 1/4 c. batter for each waffle, bake until golden

      I had pulled out my electric waffle maker after many years wanting to use it. I selected this recipe because the mix of ingredients was simple and I had them on hand. To my surprise, these were better than just good. They were delicious without any syrup or topping, though I did put some pure maple sugar syrup on them. I rate these a 4.5 rather than a 5, because for a 5 I would love to have waffles that tasted this good without eggs and butter. If you love eggs, you will love these waffles. Even if you are not an egg lover (which I cannot say I am) you will still enjoy these waffles immensely.
