Ingredients

  • 3 ounce Pearl Barley
  • 2 pt Boiling Water Grated rind and juice of 1 lemon
  • 6 Tbsp. Caster Sugar

Directions

  1. Rinse the pearl barley, put into a jug and pour in the boiling water. Add in the lemon rind and lemon juice and sugar and stir thoroughly. Leave to cold then strain into a clean jug or possibly bottle before serving. This drink will keep for up to 5 days in the fridge, but do cover it as barley water easily picks up other flavours.
