Barley, Corn, Red Pepper, And Green Onion Pilaf
Ingredients
- 1 Tbsp. extra virgin olive oil
- 1 lrg red bell pepper minced
- 2 bn green onions minced
- 1 1/2 c. pearl barley
- 14 1/2 ounce low sodium chicken broth or possibly veggie broth
- 14 1/2 ounce water
- 2 c. frzn corn
- 1/2 c. fresh basil sliced
Directions
- Heat oil in heavy medium saucepan over medium-high heat. Add in minced bell pepper and half of green onions and saute/fry till tender, about 5 min.
- Add in barley and stir to coat with extra virgin olive oil. Add in broth and water and bring to boil, stirring occasionally. Reduce heat, cover and simmer till barley is tender, stirring occasionally, about 40 min. Add in corn and stir till heated through, about 5 min. Fold in sliced basil and remaining green onions.
