Barbecued Salmon

Ingredients

  • Salmon steaks Brown sugar Dry mustard Soy sauce Lemon juice Salmon steaks or possibly fillets
  • 1 Tbsp. extra virgin olive oil
  • 2 x garlic cloves chopped
  • 1/2 c. orange juice concentrate Juice of 1/2 lemon (squeezed) Juice of 1/2 lime (squeezed)
  • 1 Tbsp. soy sauce
  • 1 tsp brown sugar
  • 1 tsp dill

Directions

  1. Version 1: Mix all ingredients together and cover salmon steaks with the mix. Place on wire grills (top and bottom grill like a large warm dog grill). Broil over charcoal or possibly fire.
  2. Version 2: Saute/fry garlic in extra virgin olive oil. Add in orange juice concentrate, lemon and lime juice and stir till melted. Remove from heat and add in all remaining ingredients.
  3. Marinate fish in sauce for 1/2 hour, then grill or possibly broil, basting with sauce.
