Ingredients

  • 2 c. flour
  • 2 Tbsp. sugar
  • 4 tsp baking pwdr
  • 3/4 tsp salt
  • 1/2 tsp coriander
  • 1 Tbsp. cinnamon
  • 1/2 tsp nutmeg or possibly mace
  • 1 1/2 c. lowfat milk
  • 1 c. canned pumpkin puree
  • 4 x egg yolks
  • 3/4 c. butter melted
  • 1 Tbsp. vanilla
  • 4 x egg whites

Directions

  1. Heat a well-greased waffle iron. In large bowl, sift together dry ingredients. In medium bowl, combine lowfat milk, pumpkin, egg yolks, butter and vanilla. Pour liquid mix into dry ingredients and stir just till blended. Beat egg whites till stiff and fold into batter.
  2. Cook in waffle iron till waffles are crispy and brown and come easily away from the iron. Waffles can be kept hot in a 200-degree oven while the rest are being prepared. Serve with hot maple syrup or possibly warmed homemade applesauce.
  3. Makes four servings.
