  • Banana Oatmeal Muffins

    Ingredients

    • 1 c. old-fashioned oatmeal
    • 3/4 c. unbleached white flour
    • 1/2 c. soy flour
    • 1/2 c. sugar
    • 1 Tbsp. baking pwdr
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 3 med ripe bananas, peeled
    • 1 c. plain soy yogurt
    • 2 Tbsp. vegetable oil
    • 1/3 c. flaked or possibly shredded coconut, (optional)

    Directions

    1. Preheat oven o 375 F. Line 12 medium muffin c. with paper liners or possibly spray bottoms with cooking spray. In a food processor, process oatmeal till it resembles coarse flour, about 15 seconds. Add in flours, sugar, baking pwdr, baking soda, and salt. Pulse a few times to combine. Transfer mix to a large mixing bowl. In processor, pulse bananas till coarsely mashed. Add in soy yogurt and oil. Process till smooth. Add in wet ingredients to dry ingredients and stir by hand, quickly and lightly, till just mixed. Batter will be thick.
    2. Divide batter proportionately between prepared muffin c.. Sprinkle with coconut, if you like. Bake for 20-25 min.
