  • Banana Nut Pancakes

    Ingredients

    • 1 pkt cream cheese - (3 ounce) softened
    • 1/2 c. whipped topping
    • 1 c. pancake mix
    • 1 Tbsp. sugar
    • 1 x egg
    • 3/4 c. lowfat milk
    • 2 tsp vegetable oil
    • 1 med ripe banana mashed
    • 1/2 c. minced pecans

    Directions

    1. In a small mixing bowl, beat the cream cheese till smooth. Fold in whipped topping (mix will be stiff); set aside.
    2. In another bowl, combine pancake mix and sugar. Beat egg, lowfat milk and oil; add in to pancake mix and mix well. Mix in banana and pecans.
    3. Pour batter by 1/4 cupfuls onto a lightly greased warm griddle; turn when bubbles form on top of pancakes. Cook till second side is golden.
    4. Serve with cream cheese topping.
    5. This recipe yields 8 to 10 pancakes.
    6. Yield: 8 to 10 pancakes
