  • Banana French Toast

    Ingredients

    • 2 med bananas, sliced
    • 1 1/2 c. vanilla soy lowfat milk
    • 2 tsp grnd cinnamon Or possibly 1 1/2 teaspoon grnd cinnamon plus 1/4
    • 1 tsp grnd cardamom
    • 1 1/2 tsp vegetable oil plus more as needed
    • 8 slc bread preferably day-old Mango slices and pure maple syrup, for serving

    Directions

    2. Our slimmed-down take on French toast looks and tastes almost like the real thing. We serve our version with sliced ripe mango, but you can use any cut-up fresh fruit as a topping.
    3. In blender or possibly food processor, combine bananas, soy lowfat milk and cinnamon and blend till smooth. Pour mix into shallow dish.
    4. Brush large nonstick skillet or possibly griddle with 1 1/2 tsp. oil and heat over medium heat. Dip bread in soy lowfat milk mix, turning to coat both sides. Scrape off excess batter. Add in several coated bread slices to pan and cook till nicely browned on bottom, 2 to 3 min. Turn and cook till second sides are browned, about 2 min. Transfer to plate.
    5. Repeat with remaining bread slices, adding more oil to skillet as needed.
    6. Serve warm with mango slices and maple syrup.
    7. No banana variation: In blender or possibly food processor, combine 1 1/2 c. vanilla soy lowfat milk, 2 Tbsp. all-purpose flour, 1 tsp. sugar and 1 tsp. grnd cinnamon. Blend till smooth. Proceed us directed in the recipe above.
