    Banana Foster Rum Upside Down Cake

    Try this new twist on the Classic Bananas Foster!

    Ingredients

    • 1/3 cup unsalted butter
    • 
1 cup firmly packed light brown sugar
    • 4 large bananas, divided

    • 1/2 cup unsalted butter, at room temperature 

    • 1/2 cup milk
    • 
3 large eggs, room temperature and lightly beaten
    • 
2 Tablespoons vanilla extract
    • 
2¼ cups all-purpose flour
    • 
1⅓ cups granulated sugar 

    • 1 teaspoon baking powder
    • 
1 teaspoon baking soda 

    • ½ teaspoon salt 


    • Banana Whipped Cream 

    • 1 cup heavy cream 
    • 
1 Tablespoon sugar
    • 
2 teaspoon banana rum or banana flavoring 


    Directions

    1. Preheat oven to 350 degrees.

    2. Add the 1/3 cup butter and mix with brown sugar. Put this mixture in the bottom of a 9” spring form pan.
    3. Slice 2 of the bananas and arrange on top of the brown sugar mixture.
    4. Mash the remaining 2 bananas combine with the next 4 ingredients in large bowl; beat at medium speed with electric mixer until blended.

In medium bowl, combine flour, sugar, baking powder, baking soda, and salt.
 Add to mashed banana mixture slowly, beating on low speed just until blended.

    6. Pour batter evenly over brown sugar and bananas in pan.

    7. Bake at 350 degrees for 40-45 minutes or until a wooden pick inserted in center comes out clean.

    8. Cool in pan for 1 minute. Loosen cake from sides of pan with knife, and invert onto a large rectangular serving platter.

    9. Banana Whipped Cream
    10. Whip heavy cream until peaks form, adding sugar and rum while whipping. Serve with cake.
