  • Banana fig muffins

    Ingredients

    • 2 cups of self raising flour
    • 1/2 cup of wholemeal self raising flour
    • 3/4 cup of caster sugar
    • 1 egg
    • 1 cup of milk
    • 90g of butter
    • 1 small mashed banana (approx. 120g)
    • 70g of figs, finely chopped
    • 2 tbs of honey
    • 1/3 cup of coconut

    Directions

    1. Preheat oven to 180 Celsius
    2. Line muffin tin with paper cases
    3. Sift flour into large bowl, then add the bran that remains in the sieve
    4. Stir in sugar, coconut, figs and mashed banana
    5. Beat egg in a bowl
    6. Add milk to egg and mc
    7. Microwave butter for 40 seconds until melted
    8. Add egg, milk, butter and honey to the bowl with dry ingredients. Mix lightly and quickly- don't over mix
    9. Divide mixture into the muffin cases and bake for 18 minutes
