Banana fig muffins
Ingredients
- 2 cups of self raising flour
- 1/2 cup of wholemeal self raising flour
- 3/4 cup of caster sugar
- 1 egg
- 1 cup of milk
- 90g of butter
- 1 small mashed banana (approx. 120g)
- 70g of figs, finely chopped
- 2 tbs of honey
- 1/3 cup of coconut
Directions
- Preheat oven to 180 Celsius
- Line muffin tin with paper cases
- Sift flour into large bowl, then add the bran that remains in the sieve
- Stir in sugar, coconut, figs and mashed banana
- Beat egg in a bowl
- Add milk to egg and mc
- Microwave butter for 40 seconds until melted
- Add egg, milk, butter and honey to the bowl with dry ingredients. Mix lightly and quickly- don't over mix
- Divide mixture into the muffin cases and bake for 18 minutes
