Banana Coffee Cake!!!

- 2 cups all-purpose flour – sifted
- 1 cup sugar
- 4 tablespoons of butter
- 2 eggs
- 2 ½ tsp. baking powder
- 4 ripe bananas
- ½ cup buttermilk
- Zest of 1 lemon 1 tsp. vanilla
- Topping:
- ½ cup shredded coconut
- 2 tablespoons of brown sugar
Directions
- Preheat Oven 350 degrees:
- Sift together the flour and baking powder.
- In a mixer blend the bananas. Add the butter, vanilla, sugar, eggs and lemon zest.
- Add the sifted ingredients slowly.
- Place the batter in buttered 8 x 8 baking pans.
- Combine the coconut and brown sugar and sprinkle on top of the cakes.
- Bake about 30-35 minutes or until the toothpick test comes out clean.
