    THESE LOAVES ARE A GREAT ACCOMPANIMENT FOR DINNER, TOTALLY GLUTEN FREE. BAKE AT 325 DEGREES FOR 35 MINUTES.

    Ingredients

    • 1/3 CUP EARTH BALANCE (BUTTER) ORGANIC
    • 1 CUP BROWN SUGAR, ORGANIC
    • 2 EGGS, ORGANIC
    • 1/2 CUP APPLESAUCE, ORGANIC
    • 1 TEAS. ORGANIC VANILLA EXTRACT'
    • COMBINE ABOVE 5 INGREDIENTS IN BOWL
    • 1 1/2 TEAS. SALT
    • 3 TEAS. BAKING POWDER, ORGANIC
    • 1 1/2 XANTHAN GUM ORGANIC
    • 2 TEAS. CINNAMON, ORGANIC
    • 1 TEAS. BAKING SODA, ORGANIC
    • 1 CUP COCONUT FLOUR, ORGANIC
    • 1 CUP GLUTEN FREE FLOUR MIXTURE, ORGANIC
    • COMBINE ABOVE 7 INGREDIENTS IN SEPARATE BOWL.
    • 3 MEDIUM RIPE ORGANIC BANANAS-1 1/2 CUPS MASHED
    • 1/2 CUP ORGANIC WALNUTS
    • 1/2 CUP ORGANIC RAISINS

    Directions

    1. PREHEAT OVEN TO 325 DEGREES. USE MINI LOAF PANS COATED WITH OLIVE OIL SPRAY & PARCHMENT PAPER ON BOTTOM & UP TWO SIDES OF EACH LOAF TO MAKE 8 SMALL LOAVES.
    2. COMBINE THE FIRST 5 INGREDIENTS IN LARGE BOWL AND MIX WITH ELECTRIC MIXER UNTIL VERY SMOOTH.
    3. COMBINE NEXT 7 DRY INGREDIENTS IN LARGE BOWL AND MIX WELL WITH A SPOON.
    4. ADD TO THE 1ST BOWL
    5. MASH THE 3 RIPE BANANAS TO MAKE 1 1/2 CUPS IN NINJA BOWL.
    6. ADD MASHED BANANAS TO THE FLOUR MIXTURE ALONG WITH WALNUTS AND RASINS AND MIX WELL.
    7. BATTER WILL BE SOMEWHAT THICK.
    8. TURN BATTER INTO PREPARED MINI LOAF PAN.
    9. BAKE MINI LOAVES FOR 35 MINUTES.
    10. PLACE FOIL OVER BREAD DURING THE FINAL 20 MINUTES OF BAKING TO REDUCE OVER BROWNING.
    11. COOL IN PAN FOR 10 MINUTES, THEN TURN OUT ON WIRE RACK.
    12. COOL THOROUGHLY BEFORE SLICING.
