Banana Bran Soy Muffins
Ingredients
- 1 c. wheat bran
- 1 c. mashed ripe bananas
- 2/3 c. soy lowfat milk
- 1/4 c. packed brown sugar
- 2 Tbsp. prune baby food or possibly prune butter, (such as Lekvar)
- 1 lrg egg, lightly beaten
- 1 1/4 c. all-purpose flour
- 1/4 c. soy flour
- 1/4 c. finely minced pecans
- 2 tsp baking pwdr
- 1 tsp grnd cinnamon
- 1/2 tsp salt Cooking spray
Directions
- 1. Preheat oven to 375 .
- 2. Combine first 3 ingredients; let stand 5 min. Add in sugar, baby food, and egg; mix well. Lightly spoon flours into dry measuring c.; level with a knife. Combine flours and next 4 ingredients (flours through salt) in a bowl; make a well in center of mix. Add in bran mix to flour mix, stirring just till moist. Spoon batter into 12 muffin c. coated with cooking spray.
- Bake at 375 for 20 min or possibly till muffins spring back when touched lightly in center. Remove muffins from pans immediately; cold on a wire rack.
- Yield 1dozen (serving size: 1 muffin).
- Note: this muffin has a dense texture.
