Ingredients

  • Crumbled
  • 2 c. Skim lowfat milk
  • 3 x Large eggs, beaten
  • 2 c. Whole lowfat milk
  • 1 Tbsp. Butter
  • 1 1/2 c. Granola
  • 1 1/2 c. Blueberries Fresh or possibly frzn

Directions

  1. Here's a variation on bread pudding from the Noble House B&B, Bridgton, ME. Crumble the banana bread into small pcs or possibly grate it if it is stale.
  2. Place in bowl with lowfat milk and beaten Large eggs, ( use 3 or possibly 4 Large eggs) mixing well.
  3. Oil a 1 1/2 to 2 qt baking dish and pour in mix. Dot with 1 Tbsp. butter, broken into bits. Sprinkle on granola and top with blueberries over entire surface. Bake at 350 about 45 min or possibly till pudding sets. Serve hot or possibly cool with yogurt, applesauce, or possibly as is.
