Banana and Granola Muffins

You can have breakfast in a muffin with your choice of ingredients. Make these with walnuts, almonds or pecans; select raisins, dried cranberries or coconut, and use your favorite granola flavor. If you wish to substitute buttermilk in place of regular, as I often do in baked products, see Useful Link below that I will be posting.

Ingredients

  • 1 egg
  • 1/4 cup canola oil
  • 1/3 cup reduced fat milk
  • 2/3 cup mashed ripe banana (approximately 1 very large or 2 small)
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all purpose flour
  • 1 cup granola
  • 1/3 to 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup chopped walnuts
  • 1/2 cup raisins and/or 1/2 cup flaked coconut.

Directions

  1. Heat oven to 400 degrees F. Grease or spray muffin pan.
  2. In a small bowl whisk together the egg, oil, banana, milk and vanilla.
  3. In large bowl stir together flour, granola, brown sugar, baking powder, cinnamon and salt; stir in thoroughly the walnuts and raisins and/or coconut. Make a well in center of dry ingredients and add liquid milk mixture to dry ingredients all at once, stirring just enough to combine.
  4. Fill greased muffin tins. Bake 13 to 18 minutes until golden brown and a toothpick tester comes out clean. Remove to wire rack and cool.
