    Ingredients

    • 1 lb grnd pork
    • 1 x shallot, diced
    • 1 Tbsp. unsalted butter
    • 1 sm handful ginger, peeled, and, diced, finely
    • 2 Tbsp. soy sauce
    • 1 tsp mirin
    • 1/2 tsp Hoisin sauce
    • 20 x dumpling wrappers
    • 1 x carrot, peeled, and, cut in brunoise
    • 1 tsp fresh cilantro, minced

    Directions

    1. Heat the butter in a saucepan over a medium heat and add in the shallots, the carrots and the ginger and sweat for a minute. Add in the grnd pork and cook till golden. Stir well. Deglaze the pan with Mirin and Soya sauce, add in the hoisin sauce and the cilantro. Season to taste with salt and pepper. Take the saucepan off the heat and let the mix cold for 5 min.
    2. In the meantime, prepare your bamboo steamer by placing it on top of a pot of boiling water. Place a piece of parchment paper in the bamboo steamer's layer. Take one dumpling wrapper and put 1/2 tsp. of the pork mix in the middle of it. With a pastry brush wet with water, brush the outside 1/2 of the dumpling sheet. Fold the dumpling in 1/2 making sure to seal the edge tightly. You can also tighten the edges with a fork to ensure a good seal. Put the dumplings on the parchment paper in the bamboo steamer and cook for 4 min. The dumplings are cooked when translucent/soft.
    3. Serve with a hoisin and Soya flavoured dipping sauce.
