Balsamic Zucchini-Ricotta Rolls

Ingredients

  • 1/2 cup balsamic vinegar
  • 6 zucchini, sliced lenghthwise about 1/4 inch thick
  • 1 tbsp grapeseed oil
  • 1/2 tsp salt
  • 1 cup ricotta cheese
  • 1/4 tsp black pepper
  • grated zest and juice of 1 lemon
  • 1/2 cup fresh basil leaves, chopped

Directions

  1. preheat outdoor grill to high
  2. Toss the zucchini in the balsamic vinegar and let stand for 10 min.Lightly brush the zucchini on both sides with the oil,season both sides with salt. Arrange them on grill in one layer and cook for 3 minuts per side or until grillnmarks appear. Remove from the grill and allow to cool
  3. Meanwhile mix the ricotta cheese with the pepper, 1 tsp of the lemon zest the lemon juice and the basil. spread a layer of the mixture over on side of the zucchini slices and roll up eash clise and press to seal. Serve the rolls with fancy tooth picks
