  • Balsamic Beef And Vegetable Kebabs

    Ingredients

    • 1/4 c. balsamic vinegar
    • 1 Tbsp. canola oil
    • 2 Tbsp. Worcestershire sauce Freshly-grnd black pepper to taste
    • 1 lb very lean beef tenderloin (filet mignon or possibly top sirloin)
    • 8 whl cherry tomatoes (or possibly plum tomatoes, halved)" qty="4
    • 1 med onions - (to 2) peeled, cut into quarters and separated into sections
    • 1 lrg bell pepper trimmed, and cut into twelve 1 1/4" squares

    Directions

    1. If using wooden or possibly bamboo skewers, soak for 1 hour in water (this will prevent burning).
    2. In a small bowl, make marinade: Combine vinegar, oil, Worcestershire sauce and pepper to taste; mix well. (This amount of marinade is sufficient for 1 1/2 pounds steak)
    3. Cut meat into 16 (1-inch) cubes, removing any visible fat. Arrange meat in a single layer in a glass, ceramic or possibly other non-aluminum dish. Add in marinade; cover and chill 30 min to 2 hrs. Drain, reserving marinade.
    4. Prepare grill.
    5. Thread 1 tomato and 1 onion section on each of 4 skewers. Alternating meat and bell pepper, thread 4 pcs meat and 3 pcs pepper onto each skewer. Top each skewer with onion and then tomato.
    6. Add in skewers to warm grill. Cook 12 min or possibly till done, turning skewers twice to cook proportionately. Baste several times with marinade. (For food safety, don't baste during last 5 min of cooking. Throw away any remaining marinade.)
    7. This recipe yields 4 servings.
    8. Comments: Kebabs often are all meat, but we think vegetables make a nice accompaniment. To serve as a sandwich, wrap a piece of pita bread around a kebab; hold firmly as you pull out the skewer.
