Ingredients

  • 1 pt cherry tomatoes minced
  • 1/4 c. fresh basil minced
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 1 x garlic clove chopped
  • 1/2 tsp salt Freshly-grnd black pepper to taste
  • 1/2 tsp sugar
  • 1 x baguette - (abt 20" long)
  • 1 x garlic clove
  • 2 Tbsp. grated Parmesan cheese

Directions

  1. Combine the minced tomatoes, basil, extra virgin olive oil, vinegar, chopped garlic, salt, pepper and sugar in a bowl. Toss.
  2. Cut the baguette into 4 pcs. Slice in half lengthwise and place on baking sheet. Toast in a 400 degree oven for about 10 min; turn once. Remove when crusty on both sides.
  3. Rub bread with the garlic clove. Spoon the tomato mix over the bread and sprinkle with Parmesan cheese. Serve immediately.
  4. This recipe yields 8 servings.
