    Ingredients

    • 45 pounds dried ziti pasta
    • 1gal heavy cream
    • 7.75 gal Spaghetti sauce
    • 15 pounds Ricotta cheese
    • 5 doz large eggs, beaten
    • 2.5 pounds parmesan cheese, grated
    • 20 pounds mozzerella cheese, shredded
    • 1 1/4 cups chopped basil

    Directions

    1. Cook pasta very al dente in salted boiling water. rinse to cool.
    2. Combine Spaghetti Sauce and heavy cream; blend well.
    3. Pour creamy sauce over cooked ziti pasta; mix well and set aside.
    4. Combine ricotta cheese, beaten eggs, grated Parmesan cheese and basil leaves; mix well.
    5. In each of well-sprayed full steam table pans, layer ziti mixture and ricotta mixture. Repeat.
    6. Top each pan with mozzarella cheese.
    7. Bake in 350-degree F. conventional oven 45min.
