Baked Ziti
Ingredients
- 45 pounds dried ziti pasta
- 1gal heavy cream
- 7.75 gal Spaghetti sauce
- 15 pounds Ricotta cheese
- 5 doz large eggs, beaten
- 2.5 pounds parmesan cheese, grated
- 20 pounds mozzerella cheese, shredded
- 1 1/4 cups chopped basil
Directions
- Cook pasta very al dente in salted boiling water. rinse to cool.
- Combine Spaghetti Sauce and heavy cream; blend well.
- Pour creamy sauce over cooked ziti pasta; mix well and set aside.
- Combine ricotta cheese, beaten eggs, grated Parmesan cheese and basil leaves; mix well.
- In each of well-sprayed full steam table pans, layer ziti mixture and ricotta mixture. Repeat.
- Top each pan with mozzarella cheese.
- Bake in 350-degree F. conventional oven 45min.
