  • Baked Tuna And Tomato Casserole

    Ingredients

    • 1 kg tuna steaks
    • 2 Tbsp. extra virgin olive oil salt, pepper
    • 1 x onions, medium
    • 4 x tomatoes
    • 1/2 c. vermouth, dry
    • 1 tsp basil, minced

    Directions

    1. Preheat the oven to 400F/200C degrees.
    2. Rub the tuna steaks with 1 tblsp extra virgin olive oil and season lightly with pepper.
    3. Slice onion fine.
    4. In a large frying pan, saute/fry the onion in the remaining oil till it is limp. Add in minced tomatoes and vermouth and cook briefly.
    5. Place the steaks in a shallow baking dish, pour on the onion/tomato mix, and bake about 20 min, covered, depending on the thickness of the tuna steaks.
    6. Fish will flake easily when cooked through;
    7. Sprinkle with basil and serve.
    8. Other varieties of fish can also be used in place of tuna. eg trevally, blue eye, snapper etc.
