  • Baked Sweet Potatoes With Apple Crusted Pork

    Ingredients

    • 4 sm sweet potatoes each weighing about 200g
    • 100 gm butter
    • 3 x fresh red chillies seeded very finely minced
    • 1 x salt and freshly grnd black pepper
    • 1 sm tart green eating apple such as granny smith cored and grated
    • 100 gm fresh white breadcrumbs
    • 1 x shallot finely minced
    • 2 Tbsp. parsley freshly minced
    • 2 Tbsp. parsley freshly
    • 4 x pork chops each about 175g
    • 2 tsp mild mustard such as dijon honeycup or possibly american mild

    Directions

    1. Aga epuipment:wire shell on third set of runners in roasting oven
    2. Cut the sweet potatoes in half lengthways and place them on the shelf in the roasting oven.
    3. Bake for 30 min till tender.
    4. Beat 50g of the butter till soft then add in 2 minced chillies to it with a little seasoning.
    5. Shape into a small log in a piece of plastic wrap then refrigeratetill required. Heat the remaining butter till melted in a small pan on the back of the aga.
    6. Mix the apple breadcrumbs shallot and one of the chillies together then add in the parsley and season with salt and pepper.
    7. Bind the mix together with the remaining melted butter.
    8. Season the chops lightly then place on a baking sheet and smear them with mustard.
    9. Press the breadcrumb mix into a thick crust on each chop then bake on the shelf with the potatoes for 20 min.
    10. Check which the potatoes are not overcooking
    11. Score the potatoes and let a slice of the chilli butter heat into each one before serving with the chops.
    12. Baked sweet potatoes are utterly delicious especially if served with a spicy butter. Iusually add in a chilli butter but fresh chilli coriander and lemon grass (often sold together as fresh thai herb mix) all very finely minced rnake a splendid thai butter for potatoes or possibly fish. Choose small potatoes that will cook quickly.
    13. Serves 4
