Ingredients

  • 4lbs Canned Tomatoes, diced
  • 2lbs Tomatoe puree
  • 11/2cups dry white wine
  • 1Tbsp basil
  • 1Tbsp Oregano
  • 15lb Fish Fillet, fresh, frozen, or thawed
  • 1cup parsley, chopped

Directions

  1. Preheat oven to 375 degrees
  2. In asauce pan, combine tomtaoes with tomatoes puree, wine, oregano, and basil and simmer for 1/2hour
  3. Spread a little of the sauce on the bottom of baking pans and arrange filets in a single layer on top of the sauce
  4. Spread with remaining sauce and bake 20-30 minutes or until fish flakes
  5. Granish with chopped parlsey
